Gluten-free Waffles (or pancakes)

Ingredients

  • 2 cups gluten free flour

  • 1 t. Xanthan gum

  • 4 t. Baking powder

  • ½ t. Salt

  • 2 T. sugar

  • 2 c. water

  • ½ c. applesauce

Directions

Measure dry ingredients into a mixing bowl. Add wet ingredients and stir to mix. If making pancakes you can add more water for thinner pancakes or use less if you like thicker pancakes. Cook pancakes on griddle or frying pan over medium heat. Cook waffles in a warmed up waffle maker.

Optional:

Can add cinnamon, dried fruit, bananas, or cooking cocoa.
