Gluten-free flatbread (or pan pizza)

Ingredients

  • 3 cups gluten free flour

  • 4 teaspoons baking powder

  • 1 teaspoon salt

  • 4 Tablespoon avocado oil

  • 2 Tablespoon agave or honey

  • 1 cup water

  • 1 teaspoon xanthan gum

Directions

Mix dry ingredients and add wet ones until dough is completely mixed. Take a handful of dough and put on lightly floured surface. Spread with hands or rolling pin until desired thickness. Lift with spatula from surface to paper plate to cast iron pan with heated avocado oil in it. Cook on one side then flip, Put toppings on- sliced vegetables, tomato sauce, fresh spinach. Cover with lid, let cook for 2 minutes. You can also make bread without toppings and put the toppings on later.
