Energy Date Balls

Ingredients

  • 2 cups walnuts, or other nut/seed of choice

  • 2 cups soft Medjool dates,

  • 1/2 teaspoon sea salt

  • 1 cup of your choice, dried apricots, dried cherries, raisins.

  • ½ c. peanut butter

  • ½ c. oatmeal

  • ¼ c. honey or agave

Directions

In a large food processor fitted with an “S” blade, process the dates until they ball up. Place in a bowl. Process other dried fruits, and mix with dates in bowl. Process walnuts, other nuts until crumbly. Add sea salt and process again. Add peanut butter, oatmeal and honey and mix everything in big bowl until a sticky, uniform batter is formed. Roll into walnut sized energy balls and put them on a cookie sheet. Ready to eat.

Can add unsweetened baking chocolate, about ½ c. or coconut ½ c. or chocolate chips (the mini ones without dairy work nicely.)
