GF Cornbread Muffins
Ingredients
1 ½ cups cornmeal
1 ½ cups gluten-free flour mix
1 t. Xanthan gum
2 t. Baking powder
½ t. Baking soda
½ t. Cinnamon
½ t. Salt
¾ cup greek yogurt or coconut milk or cream
1 ½ cups rice milk or water
¼ cup oil
¼ cup honey
2 eggs (or 2 t. Flaxseed in 2 T. water)
Directions
Preheat oven to 400 degrees. Mix dry ingredients together. Add wet ingredients and stir to mix. Do not over mix. Pour into greased baking pan or muffin tins. Cook for 12 minutes or until knife comes out clean.
