GF Chocolate Cake

Ingredients

  • 2 c. gluten-free flour mix

  • 1 t. Xanthan gum

  • 2 c. coconut sugar

  • ½ c. baking cocoa

  • 1 ½ t. Cinnamon

  • 1 t. Baking powder

  • 1 t. Baking soda

  • 1 t. Salt

  • 2 eggs or 2 t. Flaxseed or chia seed plus 2 T. water

  • ¾ c. yogurt or ¾ c. coconut cream or 1 ½ c. water

  • ½ c. applesauce or ¼ c. oil

  • Can add 2 c. shredded zucchini (optional)

Directions

Preheat oven to 350 degrees. Measure out all dry ingredients into a mixing bowl. In another bowl mix together wet ingredients and then add to dry ingredients. Pour into greased cake pan and bake for 20 minutes or until knife comes out clean.
