Chicken Stir-Fry

Ingredients

  • 2 chicken breasts or ½ deboned roasted chicken

  • 2 T. healthy oil for cooking ,( plus 2 T. oil and 1 T. cornstarch for marinating raw chicken)

  • 2 zucchini diced

  • 1 red bell pepper diced

  • 1 onion coarsely chopped

  • 2 carrots diced

  • 1 cup diced broccoli

  • 1 cup celery diced

  • 1 cup cashews

  • 1 c. asparagus cut small

  • 1 T. minced ginger

  • 1 T. minced fresh garlic

Sauce:

  • 1 c, chicken broth

  • 2 T. non GMO cornstarch

  • Salt to taste

Directions

If using raw chicken, cut into thin slices and put into plastic bag with oil and cornstarch to marinate while prepping veggies. If using roasted chicken, debone and cut into small pieces.

Put oil in pan, and stirfry vegetables. Put into large bowl, leaving oil in pan. If more is needed, add more oil and saute raw marinated chicken, (or cut up roasted chicken) with ginger and garlic. Mix cornstarch with broth and cook over meat until thickened. Salt to taste.

Serve with Cauliflower rice
