Broccoli Cheesy Soup

Ingredients

  • 2 T. Olive oil

  • 1 large onion minced

  • 4-6 garlic cloves minced

  • 7-8 cups broccoli cut bite sized

  • 4 c. broth

  • 1 c. water

  • 1 bay leaf

  • 1 t. Salt

  • 1 t. Coriander

  • 1 t. Oregano

  • ½ t. Pepper

  • ¾ c. raw cashews soaked

  • 2-3 T. nutritional yeast

  • 1’2 handfuls of spinach

Directions

Heat oil in big pot. Add onion, garlic, stirring for 5 minutes. Add broccoli, broth water, bay leaf, coriander, oregano, and salt. Liquid should cover veggies. Cover pan, and bring to a boil. Simmer until broccoli is tender, 10-12 minutes. Turn off heat and remove bay leaf.

Blend 1 c. broccoli and 1 c. broth. Let cool, and add cashews and 2 T. nutritional yeast. Cover blender with cloth to blend hot ingredients. Blend and add 1 c. broccoli and 1 c. broth. Blend. Add 1-2 big handfuls of spinach. Blend. Pour back into pot. Taste for salt.

Can add a squeeze of lime or more nutritional yeast or pumpkin seeds. Garnish with fresh cilantro, scallions or wedges of lime..
